INGREDIENTS 2 cups fresh or frozen raspberries 2 Tablespoons water (omit if using frozen berries) 2 Tablespoons maple syrup 3 Tablespoons chia seeds (white or black) ¼ teaspoon vanilla extract 1 orange (used for fresh juice (1 Tablespoon) and zest (¼ teaspoon)) Agave nectar (optional for additional sweetness) INSTRUCTIONS In a small saucepan over medium-high heat add raspberries, water and honey (omit the water if using frozen berries), bring to a boil and mash the raspberries with a fork to break them down to desired consistency. Reduce heat and simmer for additional 3-4 minutes until the mixture thickens slightly. Take pan off the heat. Add chia seeds, vanilla, ¼ teaspoon orange zest and 1 Tablespoon fresh orange juice (Use a zester to zest orange to obtain ¼ teaspoon zest. Cut orange in quarters and squeeze to obtain 1 Tablespoon juice). Stir to thoroughly combine. Taste jam. Add a splash of agave nectar for additional sweetness or additional chia seeds for thicker consistency. Place in the refrigerator and allow to cool for at least 1 hour before serving. Store in an airtight glass container in the refrigerator for up to two weeks.
I've never thought to make jam with chia seeds but that actually makes perfect sense!
Sounds like a great treat to hand out to others :)
I love chia jams! I posted one of my own a few weeks ago for a mulberry version~
This sounds like it would be great in so many things! Parfaits, cookies, just on a plain piece of toast!
