Vegan Beef Empanadas
INGREDIENTS For Ground beef: 1 12 Oz. package of Lightlife™ Smart Ground ¼ cup vegetable oil 1 Tablespoon McKay's Vegan Beef Style Instant Broth For filling: Ground beef mixture 1 tbs extra virgin olive oil 1 medium yellow onion, diced 4 tbs Sofrito 2 packets of Goya Sazón with coriander and annatto 12 manzanilla olives with pimientos, diced ½ tsp dried oregano ½ cup tomato sauce Salt and pepper, to taste For crust: 2 frozen vegan pie crusts, thawed Soy creamer, for glazing Pre-made guacamole, for serving INSTRUCTIONS Preheat oven to 375° Heat the olive oil in a large non-stick pan over medium high heat. Add diced onion and sauté until onions are softened, about 5 minutes. Add remaining filling mixture including ground beef, sofrito, sazon packets, tomato sauce, olives, oregano, salt, and pepper. Stir to combine thoroughly. Heat while stirring for 5-6 minutes until beef is warmed through and mixture is fragrant. Remove from heat and allow to cool, covered, in the refrigerator half and hour until easy to handle. Cut dough into 5" diameter circles. Place 1-2 tablespoons of filling in center and fold over, sealing the edge with a fork. Place evenly spaced on baking sheet. Brush with soy creamer. Bake at 375° for 15-20 minutes until crust is golden brown. Cool for 5-10 minutes on a wire rack before serving. Can be served warm or cold with guacamole.

I haven't tried any Lightlife products yet but I'm really interested in these empanadas!
I definitely wouldn't have expected this recipe to be vegan without that title hahaah
