Vegan White Russians with Do-It-Yourself Coffee Liqueur
Ah, the White Russian - a creamy and delicious bar staple with vodka, Kahlua, and when properly mixed, just the right touch of half-and-half. I'm not a big drinker myself, but I am a huge fan of White Russians - be it because of "The Big Lebowski" (one of my favorite movies of all time) or simply because I just really love anything that tastes like coffee. What would you say if I told you that you can easily make the White Russian vegan? How about if I told you that it's just as easy to make your own coffee liqueur for it too? In this card, I'm going to teach you how to do BOTH of those things. Use these simple recipes to make a batch of your very own White Russians or bottle up this coffee liqueur as part of a creative and inexpensive DIY birthday gift! -------------------------------------------------------------- Homemade Coffee Liqueur (A Suitable Substitute in Cocktails Requiring Kahlua or Tia Maria) 1 1/2 cups water 1 vanilla bean (or 1 teaspoon of vanilla extract) 3/4 cup ground dark coffee 1 cup vodka (or Jamaican rum) 1/4 cup agave nectar 1/4 cup maple syrup 1. Add water and vanilla bean (or extract) to a small saucepan and bring to a boil. Remove vanilla bean and set aside. Using a french press (or another brewing method of choice), combine coffee grounds and boiling water and brew for 3-4 minutes. Pour brewed coffee into a measuring cup. 2. Add vanilla bean, vodka, agave nectar and maple syrup to coffee in measuring cup. Stir until well combined. Let cool and taste, adding more agave or maple syrup if desired. Transfer to a resealable bottle. Serve immediately or let it sit for a few days. -------------------------------------------------------------- Vegan White Russians (Note: If you want to make a quick White Russian, just use 2 parts soy, 1 part Kahlua, and 1 part vodka, but the recipe below will be a whole lot creamier.) 1 oz soy milk 1 oz coconut milk (full fat) 1/8 tsp vanilla extract 2 oz coffee liqueur (above) 2 oz vodka 1. To make the 'cream', combine soy milk, coconut milk, and vanilla and whisk well until smooth. 2. Combine with coffee liqueur and vodka and serve over ice.

Thank you for the coffee liqueur recipe! I usually have Kahlua (lol) but if I don't, I might give this recipe a try instead!
