I was raised with a dietitian for a mother, and in turn, learned a whole lot about how to get a great deal of good nutrition into your day without sacrificing a lot of flavor. One of the biggest examples of this was how Mom always had a batch of freshly baked whole wheat muffins readily available as a quick breakfast or lunch option. She'd make them with zucchini or carrots, sometimes throw in raisins or dates, opt for unsweetened apple sauce instead of eggs, and always used some sort of nut to kick up the protein factor. This recipe, grabbed from my favorite food zine Put A Egg In It, is reminiscent of that same formula. Starting with a whole wheat cookie base, it's enhanced with whole oats, coconut, carrots, walnuts, and raisins to create a cookie that's suitable enough for breakfast! Don't have time in the morning? Bake these over the weekend, and they will last through the week at room temperature. Or you can even place them in freezer bags and store them for up to 3 months in your freezer! --------------------------------------------------- Spiced Carrot Oat Breakfast Cookies 1 cup whole wheat pastry flour 1 teaspoon baking powder 1 cup old-fashioned rolled oats 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground cloves 1/8 teaspoon ground nutmeg 1/2 teaspoon salt 1/2 cup pure maple syrup 1/2 cup coconut oil, melted enough to stir 1/2 cup shredded coconut 2/3 cup shredded carrots (from 1 medium carrot) 1/2 cup walnuts, chopped 1/2 cup raisins 1. Preheat the oven to 375°F with the rack in the top third of the oven. Line two baking sheets with parchment paper. 2. In a large bowl, whisk together the flour, oats, baking powder, spices and salt until well combined. In a separate bowl whisk together the maple syrup and coconut oil. Mix until well combined. Stir in the coconut, carrots, walnuts and raisins. Add the wet mixture to the dry mixture and stir until well combined and a dough is formed. 3. Drop tablespoons of the dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Bake the cookies, one baking sheet at a time, until the cookies are lightly browned on the bottom and top, 10 to 12 minutes. Repeat with baking the second baking sheet of cookies. Transfer the cookies to a wire rack and cool completely before enjoying.

Oatmeal cookies are my absolute favorite! They are filling and don't get me wired on sugar!
The "cool completely before enjoying" step sounds like the hardest!

Meatless Monday Recipe: Quick & Easy Pad Thai Spring Rolls
Making pad thai at home is deceptively easy, but making spring rolls is ridiculously fun! Combine both, and you have the pad thai tofu spring rolls below - a quick and creative meal you'll definitely find yourself making more than once. You should be able to find spring roll paper, tamarind, and chili garlic sauce in the ethnic food aisle of your local supermarket and most Asian grocers. 10-Ingredient Pad Thai Spring Rolls (Adapted From Minimalist Baker) MAKES 8 ROLLS INGREDIENTS: For The Spring Rolls - 14 ounces extra firm tofu 8 ounces white or brown rice noodles 8 - 10 white or brown rice spring roll papers 2 cups thinly sliced carrots 1 large handful fresh cilantro For The Sauce - 3 tablespoons tamarind concentrate 3 tablespoons tamari or soy sauce + more for tofu 3 - 4 tablespoons coconut sugar, agave, or maple syrup 1/2 lime, juiced 1 - 2 teaspoons chili garlic sauce + more for tofu For Serving (Optional) - Peanut sauce (Check out my Vegan DIY: Thai Peanut Sauce recipe card.) Sriracha Directions: 1) Preheat oven to 400 degrees F and line a baking sheet with parchment paper. Wrap tofu in a clean towel. Set something heavy on top - such as a cast iron pan - to press out liquid for 15 minutes. Then cut into 1/2-inch wide rectangular strips. 2) Arrange tofu on the baking sheet, giving each piece some space so it can firm up. Bake for 28 - 30 minutes to dry and firm the tofu. For softer tofu, bake for 20 minutes. For firmer, bake for 30 - 35 minutes. Set aside. In the meantime, prep carrots, cilantro, and cook rice noodles according to package instructions, then drain and set aside. 3) To make the sauce, add tamarind, tamari, coconut sugar, lime and chili garlic sauce to a small saucepan and bring to a simmer over medium heat. Once it begins bubbling, lower heat to low and cook for 3 - 4 minutes, stirring frequently.Taste and adjust seasonings as needed, adding more tamari or soy sauce for saltiness, chili garlic for heat, coconut sugar, agave, or maple syrup for sweetness, or lime for acidity. Remove from heat and set aside. 4) Heat a large skillet over medium heat. Once hot, add baked tofu and 1 teaspoon each chili garlic sauce and tamari or soy sauce, plus 1 tablespoon of the Pad Thai sauce. Sauté, stirring frequently, for 1 - 2 minutes. Remove from pan and set aside. 5) Add cooked noodles to the still-hot pan over medium heat and add remaining Pad Thai sauce. Use tongs to disperse sauce and toss noodles. Cook for 1 - 2 minutes, then remove from heat and set aside. 6) Assemble a station for preparing the spring rolls with a shallow bowl or plate (for dunking the rice paper), bring a kettle or pot of water to a boil (to cook the rice paper with), and a clean work surface (such as a large cutting board). Gather all ingredients and add hot water to the shallow bowl or pan. Let it cool for 1-2 minutes, then add 1 rice paper at a time and cook/soften for 45 seconds to 1 minute. Lift and let excess water drip off, then transfer to your clean work surface. 7) Top with pad thai noodles, tofu, carrots and cilantro, then roll over once, tuck in sides, and continue rolling all the way up. Place seam-side down on a serving plate or baking sheet and cover with a damp, room temperature towel to keep fresh. Continue until all spring rolls are prepared - about 8. 8) Serve as is with a bit more chili garlic sauce or sriracha! Another great addition is the aforementioned peanut sauce posted above. Best when fresh, though leftovers keep covered in the refrigerator for 2-3 days.
Salted Caramel Chocolate Chip Cheesecake Bites ♥ – Sally's Baking Addiction
Oh my goodness gracious I need these in front of me RIGHT NOW. I'm obsessed. Those adorably tiny chocolate chips? And sweet caramel goodness? And Oreo cookie crust?! And CHEESECAKE, for Pete's sake?!? It just really couldn't be any better, dessert-wise. Sally's Baking Addiction, I salute you for creating this incredible little treat that's sure to be the reason I gain 300 pounds over the next month. ♥ To make your own batch of these decadent little treats, you will need: 18 whole Oreos (Double Stuf or regular) 1/4 cup (60g) unsalted butter, melted 16 oz (448g) full-fat cream cheese, softened to room temperature 3/4 cup (150g) granulated sugar 1/4 cup (60g) yogurt (you can also substitute sour cream) 2 large eggs 1 teaspoon vanilla extract 1 cup (180g) mini semi-sweet chocolate chips homemade salted caramel sauce (you can find the recipe here!) Here's what you do! 1. Preheat your oven to 350°F. Line two cupcake pans with 18 paper or aluminum cupcake liners. 2. Make the crust: Use a food processor to reduce Oreos into a fine, crumbly texture. In a medium-sized mixing bowl, combine cookie crumbs and melted butter. Spoon one heaping tablespoon of the mixture into each liner, then press down firmly and uniformly with fingers. You should have enough for 16-18 liners. Bake for 5 minutes and allow to cool while you make the filling. 3. Make the filling: In a large mixing bowl, use an electric beater to beat the cream cheese on medium speed until smooth. Add sugar and yogurt, and beat to combined. Turn mixer down to low speed and add eggs one at a time. Finally, beat in vanilla and mini chocolate chips. Remember to scrape down the sides of the bowl with a spatula as needed! 4. Use a spoon to fill cupcake molds with batter until almost full. Bake for 20-23 minutes. When you remove the cheesecakes from the oven, their centers will still be slightly jiggly and they may have inflated a bit. That's all perfectly normal. Allow to cool at room temperature for an hour. 5. After they've cooled at room temp, place the cheesecakes in the fridge and allow to chill another two hours. Top with salted caramel and additional mini-chips just before serving. Note: You can store cheesecakes in an airtight container in the fridge for up to 5 days. Store cheesecakes (without caramel) in the freezer for up to 2 months. Thaw in the refrigerator overnight. Let me know if you make these!! :D I know they're top priority on my To Bake list. Celebrate summer with these yummy green tea smoothies! They're packed with seasonal fruit and all the nutrients your body needs, helping you eat smart and achieve your health goals. Plus, they've got more potassium than bananas, making them excellent supporters of healthy blood pressure levels. At only 139 calories, this low-cal concoction is better as a snack than a meal replacement. Source: Popsugar A Few Tips: Use frozen fruit. It's cheaper, easier to store, won't go bad, AND might even have more antioxidants than the fresh fruit you find in the supermarket, since it's picked and frozen at peak ripeness. To brew strong green tea, use two tea bags – but don't oversteep. Oversteeping can give your tea a bitter flavor that other ingredients might not succeed in masking.

I guess these people never got the memo about lasagna being a dinner food – and oh man, am I glad they didn't. The Christmas Latte to Rule Them All
I've talked about this cafe before, and I'll talk about it again. All That Sweets is hands down my favorite dessert cafe on Earth. Watch my video review here or read below^^ Today I went alone so I passed on a slice of the strawberry shortcake but look how adorable is it! Their cakes are always light and creamy, though the flavors change daily! I've seen chocolate, vanilla, and even kiwi cakes. Instead I opted for one of their amazing macarons. Because I came late in the day, my only option was the chocolate raspberry "merry xmas" heart macaron, but I probably would have chosen that anyway. These flavors also vary with the season but every single one I've ever tried has been absolutely delicious. But of course, the star of the show is my Christmas Tree Latte <3 Their lattes are amazingly intricate, and they have a dozen of them on the menu at all times. The homemade (delicious) whipped cream is covered in melted chocolate, sprinkles, and meringue cookies. I seriously thought I hated meringue until I tried these babies. Now I can't get enough! They sell these for the month of December, and then usually move on to make snowflake or other winter themed lattes. All year 'round they offer rose, raincloud, and even coral styled lattes!
