Pete's Homemade Congo Bars
Pete Davis, avid hiker in Colorado, has this awesome recipe for homemade trail snack called the "Congo Bar," which he says are cheaper than and more delicious than Cliff Bars! The next time you need an energy-packed snack for your workout, diet or hike, try these! If you're taking them hiking, they don't need refrigerated, but you might want to put them in an air tight plastic bag to keep them soft. ------------------------------------------------------------- Pete's Congo Bars 1. First, coat a 9x12 glass or metal oven pan with shortening. (The pan has to be at least 2” deep!) Preheat oven to 350 degrees. 2. Second, mix in large bowl: - 2 cups rolled oats - 2 cups high gluten white flour - 1/2 tsp. salt - 1 T. baking powder - 1 cup Grape Nuts (or use cracked wheat) - 1 cup dark brown sugar - 1 cup white sugar 3. Third, add: - 1 cup chocolate chips - 1 cup broken walnuts - 1 cup raisins 4. Fourth, add and mix well: - 1 tsp. vanilla (or whisky or rum) - 2 eggs - 2 sticks of softened butter - 8 oz. water (closer to 6 oz. if you’re at or near sea level) 5. Fifth, put mixture into greased oven dish and bake for 45 minutes. A toothpick should come out clean. Note: Pete has adapted this recipe to baking at 9000 feet. Watch carefully the first time to avoid overcooking. 6. Sixth, cool the bars to room temperature, cut them into pieces, and wrap individual pieces in plastic sandwich bags. *Tips! - You can also bake these as cookies. Drop two tablespoons at a time and bake at 350 for about 15 minutes. - Make sure to put in plastic so they don't get hard. - Substitute the chocolate chips for any other flavor of chip instead to make them taste very different. - Substitute the sugar amounts to match your taste! - Add coconut to take a new twist on the bars!

Small bars I buy to fuel myself for workout turn out pretty costly at the end of a month. I will save up my budget with this recipe. Thanks!

This sounds like a cookie bar until you get to the Grape Nuts! They must add a pretty interesting crunch.
