I hate leaving leftover pasta especially if it's tomato or cream base that requires a microwave to warm up the next day. When I know my morning will be rushed I love cooking cold pasta for dinner and save a portion for lunch the next day. it's quick and simple. Plus, the texture and taste only gets better once you refrigerate it. The best part - you don't need a microwave to heat it up. This is the beauty of cold pasta.
8 ounces bow tie pasta
2 medium avocados (chopped)
6 slices cooked bacon, crumbled
2 medium ripe tomatoes, roughly chopped
2/3 cup chopped fresh basil
2 tablespoons lemon juice
1 tablespoon olive oil
3 cloves garlic, minced
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1/2 cup finely shredded Parmesan cheese
1. Cook bow tie pasta. Drain.
2. In a large bowl combine all the ingredients, gradually add the pasta, mix well, then sprinkle with cheese.
