Meatless Monday Recipe: Imam Bayildi, Turkish Baked Stuffed Eggplant

My older sister made this for dinner last night and insisted I share this with all of the Vingling Vegans. (Vegan Vinglers? Veganglers? I feel like we can come up with something cute here.) She swears this is one of the most delicious recipes she's tried as of late, and I believe her enough to want to drop off at her house after school today and swipe some leftovers. Imam Bayildi is one of the most popular olive oil-based dishes hailing from Turkey and is known for its incredible aroma. In fact, the dish translates to "The Imam (a Muslim priest) fainted!" - something that allegedly an imam actually did after enjoying his first bite of this stuffed and roasted eggplant so much! -------------------------------------------------- Imam Bayildi, Turkish Baked Stuffed Eggplant 6 small to medium eggplants, rinsed 1/2 cup extra virgin olive oil, divided 1/2 cup water 3 medium or 2 large onions, peeled and quartered 4 garlic cloves, smashed, peels removed 1-inch knob ginger, peeled and smashed 1 large handful parsley leaves 5 plum tomatoes, quartered 2 teaspoons ground cumin 1 teaspoon ground coriander Kosher salt 1/2 cup soy yogurt, plain 3 tablespoons pomegranate molasses (If you do not have pomegranate molasses, leaving it out or subbing it with regular molasses is fine.) 1/4 cup toasted slivered almonds, or use toasted pinenuts 1/2 cup mint leaves, finely chopped 1. Adjust oven rack to middle position and preheat oven to 350°F. 2. Prepare the eggplants: using a sharp vegetable peeler, peel away some of the eggplant skin lengthwise, leaving some stripes of skin. Cut eggplants in half lengthwise, leaving stem intact. Using a tablespoon, scrape out seedy inside of eggplant; reserve. Place eggplants into one very large glass baking dish (divide between two dishes if necessary); pour 1/2 cup water and 1/4 cup olive oil into bottom of dish. Salt eggplants lightly, then cover dish tightly with tin foil and place in oven. 3. While eggplant bakes, prepare filling: heat 1/4 cup olive oil in a large Dutch oven over medium-high heat until shimmering. Place onions, garlic, ginger and parsley into bowl of food processor. Pulse until onions are finely chopped. Add mixture to hot pan and stir. 4. Add tomatoes to bowl of food processor and pulse until finely chopped. Add to pan with onions and stir. Finally, add reserved eggplant flesh to bowl of food processor and pulse until finely chopped. Add eggplant to pan and cook vegetable mixture, stirring occasionally, until it has reduced by half, about 10 minutes. Add cumin, coriander and salt to taste and cook, stirring, 2 minutes more. 5. Very carefully remove eggplant from oven and remove tin foil. Divide filling between eggplant halves and re-cover with tin foil. Return to oven and bake an additional hour. Remove eggplant from oven, remove tin foil, and bake, uncovered, for 15 minutes more. 6. Remove eggplant from oven and cool to room temperature, about 30 minutes. Place eggplant on a platter and drizzle with yogurt and molasses, then sprinkle with toasted nuts and mint. Serve immediately.

@GetFitwithAmy It's a really popular ingredient in Middle Eastern and Greek cooking. You can usually find it in the Kosher/Middle Eastern part of the International food aisle of your grocery store.

Homemade Pop-Tarts? Oh Hells Yeah!
I never want to eat a store bought Pop-Tart again. Not after looking at this recipe, which uses real, flaky butter pastry (instead of crumbly cardboard dough) and your favorite fruit preserves (instead of sugar mixed with red dye 40). The homemade frosting and cheerful rainbow sprinkles are the icing on the cake! For now, here's the recipe for your new favorite breakfast (or anytime) treat. Homemade Pop-Tarts Prep Time: 20 mins. Chill Time: 3 hours. Cook Time: 30 mins. Difficulty: Medium Makes 8 pop-tarts What You'll Need For the pastry: 2 cups + 2 Tbsp all-purpose flour, plus more for rolling 1 tsp salt 1 tsp granulated sugar 1 cup unsalted butter, cold and diced into 1/2-inch cubes 4 - 5 Tbsp ice water 3/4 cup strawberry preserves, divided (or other preserve of choice) For the icing: 1 cup powdered sugar 2 Tbsp half and half, plus more as needed 1/4 tsp vanilla extract What To Do 1. Make the pastry dough: Pulse together flour, salt and granulated sugar in a food processor. Add butter and continue to pulse until the butter is broken up, and the mixture has a mealy texture. Add 4 tablespoons of water and pulse a few times until it comes together into dough; if it fails to come together, add another tablespoon of water and pulse again. 2. On a clean surface, divide dough into two portions. Shape each into a 5-inch dish, cover with plastic wrap, and chill in the fridge for 1 hour. Meanwhile, line two rimmed cookie sheets with parchment paper. 3. Remove one disk from the fridge; leave the other one to chill. Roll out the dough disk into a rectangle measuring approximately 13 inches by 11 inches. If edges crack, just stick them back together and keep rolling. Trim edges just so, so you have a 12"x10" perfect rectangle. Cut this into 8 5"x3" rectangles. 4. Arrange 4 rectangles evenly spaced on the parchment-lined cookie sheet; spread 1 and 1/2 tablespoons of jam evenly down the center of each rectangle. Seal edges with fingertips, then reseal with a fork. Use a tooth pick to poke the top of each tart 4 times. Let chill in the freezer for at least 2 hours, or up to one week. 5. Repeat process with second disk of dough. 6. Preheat oven to 375°F. With one rack in the upper third of the oven and one in the bottom third, bake frozen tarts until golden, rotating racks halfway through baking. It will take about 25-30 minutes in all. Allow to cool on the cookie sheet for several minutes, then transfer to wire rack. 7. Make the icing: Whisk together all ingredients, then add additional half and half a 1/2 teaspoon at a time until you reach the desired consistency. Spread over cooled pop-tarts, then dust with rainbow sprinkles. Allow to set at room temperature. Store in an airtight container. Enjoy! A little bit of a process, but totally worth it, don't you think? I can't wait to try these sweet treats in my own kitchen! :D

Healthy Strawberry Chia Watermelon Smoothie
Cold and refreshing, sweet and tart, with a twist of lime for freshness – this vegan, gluten-free smoothie is a perfect (and healthy!) summer treat, complete with chia seeds, which I probably don't need to tell you are a nutritional GOLD MINE. Chia seeds are packed with fiber and antioxidants. They're a good source of protein, and gram for gram, have more Omega-3 fatty acids than salmon. It's no coincidence that "chia" means "strength" – ancient Mayans and Aztecs prized this tiny seed for its sustainable energy. Today, health nuts everywhere rejoice in the chia's ability to pack so much good stuff into so few calories! (Source) This delicious, refreshing smoothies could not be easier to make. Minimalist Baker has whipped up another incredible recipe for us; check out their site for a lot of other wonderful treats that take one bowl, less than 10 ingredients, or 30 minutes (or less!) to prepare. In the meantime, pour yourself a big glass of this smoothie, sprinkle on some chia seeds, and feel your cares float away on the summer breeze. Strawberry Chia Watermelon Smoothie Recipe by Minimalist Baker Serves 2 Ingredients 1 1/2 cups (240 g) fresh watermelon, cubed (black seeds removed) 1 cup (120 g) frozen strawberries 1/2 ripe banana (50 g), previously peeled, chopped and frozen 1/2 - 3/4 cup (120-180 ml) unsweetened plain almond milk 1 lime, juiced (~30 ml) 1 Tbsp chia or hemp seeds (optional) Add all ingredients to a blender and blend until creamy and smooth, adding more almond milk to thin, or more frozen strawberries or ice to thicken. Taste and adjust seasonings as needed, adding more lime for acidity, banana for sweetness, or watermelon for a more intense watermelon flavor. Top with additional chia seeds to mock watermelon seeds! Your New Favorite Tabbouleh Salad Recipe (Vegan)
I love Middle-Eastern salads. I am a big advocate of eating tons of Middle-Eastern salads when you're on a diet. Not only are all the ingredients so colorful and fresh, but the lemon, mint, and olive oil so essential to these dishes create such a perfect combination of flavors that you don't even realize just how healthfully you're eating! Tabbouleh salad is perhaps my favorite one, and I remember growing up, tabbouleh was one of those few things (minus cold pizza) that tasted arguably even better a few hours later. Similar to a panzanella salad, the wheat absorbs all the delicious ingredients if it sits a little longer! Don't believe me? Let this taboulleh sit in your fridge for at least an hour before eating it, and you'll see that it was definitely worth the wait! ------------------------------------------------------------- Tabbouleh 1/2 cup fine burghul (cracked wheat) 2 large tomatoes, diced 1 bunch green onions, chopped 4 bunches parsley, chopped 1/2 bunch mint, chopped (or 2 tbsp. dried mint) 1 large cucumber, peeled and chopped 1/2 cup olive oil Juice of 3 lemons 1 tbsp. salt 1/2 tsp. pepper Wash Burghul. Drain and place in a large bowl. Add all chopped vegetables and mix well. Add olive oil, lemon juice, salt, and pepper. Mix again, and serve over fresh green lettuce. ------------------------------------------------------------- You could eat this with a fork, but perhaps my favorite way is scooping it up with leaves of romaine lettuce, slightly similar to how you would eat a lettuce wrap. It's delicious!
Meatless Monday Recipe: Quick & Easy Pad Thai Spring Rolls
Making pad thai at home is deceptively easy, but making spring rolls is ridiculously fun! Combine both, and you have the pad thai tofu spring rolls below - a quick and creative meal you'll definitely find yourself making more than once. You should be able to find spring roll paper, tamarind, and chili garlic sauce in the ethnic food aisle of your local supermarket and most Asian grocers. 10-Ingredient Pad Thai Spring Rolls (Adapted From Minimalist Baker) MAKES 8 ROLLS INGREDIENTS: For The Spring Rolls - 14 ounces extra firm tofu 8 ounces white or brown rice noodles 8 - 10 white or brown rice spring roll papers 2 cups thinly sliced carrots 1 large handful fresh cilantro For The Sauce - 3 tablespoons tamarind concentrate 3 tablespoons tamari or soy sauce + more for tofu 3 - 4 tablespoons coconut sugar, agave, or maple syrup 1/2 lime, juiced 1 - 2 teaspoons chili garlic sauce + more for tofu For Serving (Optional) - Peanut sauce (Check out my Vegan DIY: Thai Peanut Sauce recipe card.) Sriracha Directions: 1) Preheat oven to 400 degrees F and line a baking sheet with parchment paper. Wrap tofu in a clean towel. Set something heavy on top - such as a cast iron pan - to press out liquid for 15 minutes. Then cut into 1/2-inch wide rectangular strips. 2) Arrange tofu on the baking sheet, giving each piece some space so it can firm up. Bake for 28 - 30 minutes to dry and firm the tofu. For softer tofu, bake for 20 minutes. For firmer, bake for 30 - 35 minutes. Set aside. In the meantime, prep carrots, cilantro, and cook rice noodles according to package instructions, then drain and set aside. 3) To make the sauce, add tamarind, tamari, coconut sugar, lime and chili garlic sauce to a small saucepan and bring to a simmer over medium heat. Once it begins bubbling, lower heat to low and cook for 3 - 4 minutes, stirring frequently.Taste and adjust seasonings as needed, adding more tamari or soy sauce for saltiness, chili garlic for heat, coconut sugar, agave, or maple syrup for sweetness, or lime for acidity. Remove from heat and set aside. 4) Heat a large skillet over medium heat. Once hot, add baked tofu and 1 teaspoon each chili garlic sauce and tamari or soy sauce, plus 1 tablespoon of the Pad Thai sauce. Sauté, stirring frequently, for 1 - 2 minutes. Remove from pan and set aside. 5) Add cooked noodles to the still-hot pan over medium heat and add remaining Pad Thai sauce. Use tongs to disperse sauce and toss noodles. Cook for 1 - 2 minutes, then remove from heat and set aside. 6) Assemble a station for preparing the spring rolls with a shallow bowl or plate (for dunking the rice paper), bring a kettle or pot of water to a boil (to cook the rice paper with), and a clean work surface (such as a large cutting board). Gather all ingredients and add hot water to the shallow bowl or pan. Let it cool for 1-2 minutes, then add 1 rice paper at a time and cook/soften for 45 seconds to 1 minute. Lift and let excess water drip off, then transfer to your clean work surface. 7) Top with pad thai noodles, tofu, carrots and cilantro, then roll over once, tuck in sides, and continue rolling all the way up. Place seam-side down on a serving plate or baking sheet and cover with a damp, room temperature towel to keep fresh. Continue until all spring rolls are prepared - about 8. 8) Serve as is with a bit more chili garlic sauce or sriracha! Another great addition is the aforementioned peanut sauce posted above. Best when fresh, though leftovers keep covered in the refrigerator for 2-3 days.
The Most Authentic Hummus Recipe You Will Ever Find (Vegan)
Growing up in a Palestinian-American family, hummus was such a staple. My mother used to make sure plenty of tahini and chickpeas were readily available in the kitchen for when it was time to whip up a fresh batch for visiting family and friends. I ate hummus while I watched Saturday morning cartoons. I ate hummus at birthday parties, graduation parties, Thanksgiving, Christmas, and Easter Sunday. I ate hummus in sandwiches or as a dip with carrot sticks and cucumbers. It was even a great alternative for onion dip when I needed something to dip my pretzels in. I recently 're-stumbled' across a book one of my cousins typed up from scribbled down Palestinian-style recipes passed around in my family for several generations. I figured there were probably tons of fellow hummus lovers on Vingle, so I've decided this would be a good opportunity to share the family recipe with others! --------------------------------------------------------- Chick Pea Dip (Hummus bi Tahineh) 1 lb. can of chick peas 1/3 cup tahineh Juice of 1 or 2 lemons 1 clove garlic Salt to taste 3 tbsp. olive oil A pinch of sumac (Note: Sumac is a dark-colored spice used in a lot of Arabic cooking. It's optional in this recipe, but if you're wanting to find some for yourself, I'd suggest looking in the ethnic ingredients section of your supermarket.) Boil chick peas in juice for 5 minutes on medium heat. Drain. Place chick peas, Tahineh, lemon juice, garlic, and salt in blender. Blend for 15 seconds to make an almost smooth, thick paste. Place Hummus in a plate and garnish with parsley, radishes, red pepper, and pickles. Cover dish with olive oil and sprinkle sumac. Or brown 3 tbsp. pine nuts in 2 tbsp. butter, and pour over Hummus instead of olive oil. --------------------------------------------------------- You can customize the garnish to your own personal tastes. I usually like to use olive oil, sumac, fresh chopped mint, whole chickpeas, and/or whole kalamata olives. The recipe is really easy and really inexpensive to make. (I'd suggest trying some in a fresh falafel sandwich!)
Falafel Burgers with Tahini Sauce, an American Favorite with a Mid-East Twist!
One of my favorite local restaurants is called The Roxy in the small beach community of Leucadia. A staple stop on the historic Pacific Coast Highway, the Roxy serves anything from American to Italian to Greek to Mexican - even freshly made ice cream! But they are probably most famous for their fresh falafel balls, which they prepare is an assortment of ways. You can get falafel as an appetizer, in a pita, or on a salad, but their falafel burgers are what hits The Roxy's menu out of the park! Here is a recipe inspired by the Roxy's falafel burgers. Fresh falafel is not only incredibly delicious, but also extremely good for you! Make these burgers the next time you want to put a little fusion in your standard burger spread. You won't regret it! -------------------------------------------------------------------------------- Falafel Burgers with Tahini Sauce 2 cans of chickpeas 1 cup of onion 3-4 garlic cloves 2 tablespoons lemon 4 teaspoons olive oil 1 tsp. salt 1 tsp. black pepper 1 tsp. ground coriander 1 tsp. ground cumin 1 tsp. all-spice 1 cup of breadcrumbs, divided For the Tahini Paste 1/4 cup ground sesame paste (tahini) 1/4 cup hot water 3 tablespoons of lemon juice 2 cloves of garlic salt to taste For the falafel burgers: 1. Chop onions and garlic and throw them into a mixing device with lemon juice, olive oil, chickpeas, and seasonings. 2. Pour mixture into a large bowl with 1/2 of the breadcrumbs and mix until firm. 3. Form patties and then dip into leftover breadcrumbs on both sides. 4. Heat a skillet with some olive oil and cook on 2-4 minutes on each side, or until falafel burger is golden brown. 5. Serve with buns and toppings of your choice. For the Tahini paste: 1, Add ingredients for tahini paste into a blender and blend until creamy. 2. Serve with your falafel burger.
How To Build An Authentic Falafel Sandwich (Vegan)
Visiting the Getty Museum is probably my most favorite reasons to drive out to Los Angeles with my friends. It's like Disneyland for art nerds, where every large building houses an immeasurable amount of visual history and work by many of the famed masters. However, all Rembrandts aside, the Getty Museum is also really close to a Zankou Chicken, a Lebanese 'fast food' restaurant that serves up bang-for-your-buck hot shwarma and falafel sandwiches. It's become a tradition of mine to stop off at Zankou after a full day of art-viewing to get tasty sandwich with my friends. So good! One of the things that makes Zankou my favorite is how they build their sandwiches - much more traditionally than most other places that serve falafel. (And while things like the 'falafel burger' might be fun every once in a while, sometimes you just want to eat something that tastes like your Mom made it, you know?) So, inspired by Zankou Chicken's falafel sandwichy goodness, I've decided I wanted to give you all a recipe showing how to make some delicious (and not dry!) traditional falafel sandwiches. Try it the next time you want to get a little more 'international' with your lunch! ------------------------------------------------------------------ Falafel Sandwiches (serves 4) 4 cups chickpeas, dried 2 large onions 1 whole head of garlic 2 bunches parsley Hot banana peppers to suit your taste Pickled turnips to suit your taste 1/2 a medium-sized cucumber, sliced 1/2 a tomato, sliced 2 tsp. cumin powder Salt and pepper to taste 1 tsp. baking powder 1/4 tsp. baking soda 2 - 3 loaves of pita bread 1 cup tahini paste 1/4 cup lemon juice 1/2 - 3/4 cup water, as needed 1/2 - 3/4 tsp. salt To Make Tahini Sauce: 1. Combine tahini, lemon juice, and two cloves of minced garlic in a bowl and stir to combine. 2. Add the water a little at a time as needed to form a smooth, creamy sauce approximately the thickness of heavy cream. 3. Season to taste with salt and more lemon juice, if necessary. To Make Falafel: 1. Soak the chickpeas overnight. Drain. 2. Combine beans, onions, garlic, parsley, and hot pepper in a food processor. Add salt, pepper, cumin, and baking powder. Mix thoroughly. 3. When ready to fry the Falafel, add baking soda. Shape into patties in 1 1/2" in diameter and 1/2" thick. (Small 'meatball' sizes are okay too!) Fry in deep hot oil until light brown and crisp. 4. Serve hot with tomato slices, cucumber slices, banana peppers, onion slices, and/or pickled turnip in pita bread in the form of a sandwich. Add the tahini sauce. ------------------------------------------------------------------ If you don't have four people to share this with, no worries! The falafel batter can be easily frozen and stored for the next time you want to make yourself a falafel sandwich. Just remember to thaw and add the baking soda just before frying.
