Sometimes I feel as if, when people think of vegans or the vegan diet, they think it's all hummus, tofu, and leafy greens. And while I genuinely enjoy eating all of these things (as do many vegans), we can have fun with our food just as well as anyone else! Case in point, observe the soy 'sloppy joe', which has all the sloppiness of a standard sloppy joe without any of the cholesterol! Serve this up for your kids with a side of tater tots or cole slaw - or serve this up for yourself just because, you know, sloppy joes. ----------------------------------------- Soy Sloppy Joes 1 1/2 tablespoons light olive oil 1 medium onion, finely chopped 1 12- to 16-ounce package soy "crumbles" (I recommended GimmeLean or Smart Ground brands, which you should be able to find with the refrigerated or frozen vegetarian foods in your local grocery store.) 1 16-ounce can or jar natural pizza sauce Fresh burger buns (preferably whole-grain), as needed 1. Heat the oil in a large skillet. Add the onion and saute over medium heat until golden. 2. Add the soy crumbles and saute over medium-high heat, stirring frequently, until lightly browned, 3 to 4 minutes. Stir in the pizza sauce and cook until heated through, 3 to 4 minutes. 3. Serve at once on buns, open-faced or covered.
