Dried fried chips are getting more and more popular (and I've seen more people trying to take them on day hikes as a snack) but making them is not something I've seen as much info on!
It's pretty easy to put them together, so if you want to make a healthy snack (with no chemicals!) or have some apples that are close to going back, try this method.
1) Gather your apples (hopefully organic) and wash them to remove any waxes.
2) Peel, core and slice each apple into thin strips, about 1/8 inch. After cutting each strip, put them into a large bowl of cold water with some lemon juice squeezed into it. This will prevent quick browning!
3) Drain the apples and spread them out on mesh-lined drying racks.
4) Use a dehydrator to dry at 135-145° till dry.
5) Store in glass jars in a pantry or other cool dark place.
6) Shake up every month to redistribute any moisture that forms.
It is possible to this in an oven, but you won't be able to store them for more than 2 weeks, 4 weeks in the refrigerator!
Just position racks in the upper and lower thirds of oven; preheat to 200°F. Line 2 large baking sheets with parchment paper, and put your apples in for 1-2 hours on each side. Then, crack the door and let them completely cool for 1-2 hours!
