V-Day Vegan Recipe: Dark Chocolate Pears with Almond or Hazelnut Crunch
Did I just cause your mind to explode a little bit? I certainly hope so. There's caramel apples, candied strawberries - certainly we've got room for some chocolate dipped Bosc pears in our lives too, right?
This recipe is loosely based around gourmet food retailer Harry & David's similar chocolate-dipped pear gift set. But why not achieve that same level of decadence in our very own kitchen? Your Valentine would certainly admire the extra effort!
Dark Chocolate Pears with Almond & Hazelnut Crunch
5 ripe Bosc pears (or red Barletts for something very V-Day)
1 1/2 cup dark chocolate chips
1 cup toasted hazelnuts, chopped (or salted almonds, chopped)
1. Pour the nuts in a dry skillet. Toast them over medium-high heat for several minutes, tossing occasionally to prevent burning. Set aside to cool. Once the nuts are cool run your knife over them to roughly chop or use a food processor pulsing until you've reached your desired consistency.
2. Over a double broiler melt dark chocolate, or in a microwave using 30 second intervals, stirring in between.
3. Dip bottom third of each pear in dark chocolate, followed by chopped nuts. Place on parchment lined baking sheet. Repeat these steps with each pear until finished. Place in refrigerator for 30 minutes to set chocolate.
