V-Day Vegan Recipe: Valentine's Day Vegan Almond 'Smooches'

Did you know that all Hershey's Kisses (including their Special Dark Chocolate Kisses) are made with milkfat? That's not-so-perfect for those on a vegan diet who want to dig into a bag of this classic candy on Valentine's Day. But fear not! Cara Reed, the incredible vegan blogger behind Fork & Beans, has cracked the code and created a vegan kisses recipe suitable for Valentines of any and all diet restrictions. (Note: There IS nuts, however. But feel free to omit them from the recipe or replace them with something equally delicious.) ---------------------------------------- Vegan Almond 'Smooches' 1/2 cup non-dairy chocolate chips (I use Ghiradelli chocolate chips.) 12 almonds mini funnels *see note silver foil candy wrappers (or any other color/pattern of choice) "Happy Valentine’s Day" printed strips 1. Melt the chocolate chips in a double broiler or in a large metal bowl over top a saucepan filled with water to touch the bottom of the bowl. Alternatively, place the chocolate in a microwave safe bowl and microwave at 30 second increments. Stirring at each stop. This should take about 90 seconds total. 2. Fill the funnel half way with melted chocolate, making sure the chocolate fills a little into the narrowest part. Place almond in middle, making sure that the chocolate is covering it entirely. 3. Standing upright, freeze for 10 minutes. Remove smooches from funnel by gently squeezing the chocolate mold out. This should easily slip out. If not, freeze for another minute. 4. After you cut out Happy Valentine’s Day paper strips (I printed mine out from the computer at size 8 Typewriter font), fold 1/4 inch of the paper under the smooch, making it stand upright. Proceed to wrap with silver candy foil (you will need to cut the wrap to fit each individual kiss).

V-Day Vegan Recipe: Turtle Cheesecake with Pecans, Fudge, and Caramel Drizzle
My father's favorite chocolate was always Turtles. Every Christmas, every birthday, even Easter Sunday, and every Valentine's Day, we all knew exactly which candy we were going to surprise him with. As my sister became more and more invested in her vegan diet, however, she eventually upgraded her Turtle gift into this truly decadent vegan Turtle cheesecake, topped with pecans, caramel sauce, and hot fudge. Check the ingredients labels, and you should be able to find some vegan hot fudge at the grocery store. Caramel sauce might be a little trickier. However, don't worry. I've made sure to include a homemade recipe for both, so you can make them both from scratch, if needed! -------------------------------------------------------- Vegan Turtle Cheesecake 2 (8-ounce) packages vegan cream cheese (I recommend Tofutti Better Than Cream Cheese's original flavor.) 2 cups vegan sour cream 3/4 cup sugar 2 teaspoons pure vanilla extract 1/4 cup whole wheat flour 1 tablespoon ground flaxseeds 1 vegan chocolate cookie pie crust (Keebler's Chocolate Ready Crust is surprisingly vegan!) 1/4 cup toasted pecans 2 eggs worth of Ener-G Egg Replacer (or any other binding vegan egg replacer of choice) 1 batch of hot fudge topping (see below) 1 batch of caramel topping (see below) 1. Preheat the oven to 300 degrees F. In your largest mixing bowl, blend the vegan cream cheese, vegan sour cream, and sugar using an electric handheld mixer until smooth. 2. Add the vanilla, flour, and flaxseeds and mix for about a minute. It’s important to make sure there aren’t any lumps. Pour your creamy filling into the chocolate crust. 3. Bake for 40 to 45 minutes. Check the center with a toothpick to make sure it’s solid. Pull the cheesecake out of the oven when it is solid to the touch and passes the toothpick test or when the top starts to crack a little and begins pulling from the sides. 4. Cool on a wire rack for around an hour and then top with pecans and sauce (see recipe for sauces below). Refrigerate overnight and then enjoy this wonderful treat! For the Hot Fudge Topping: 1 cup Silk vanilla coffee creamer (or any other non-dairy vanilla coffee creamer) 1/2 a bag of vegan chocolate chips (I use Ghirardelli, but there are lots of others.) 1/2 cup of sugar 1 tablespoon Earth Balance vegetable spread 1 teaspoon vanilla 1. In a sauce pan, heat the creamer, chocolate, and sugar at medium heat until it starts to boil. Remove from heat and whisk in Earth Balance and vanilla until the mix is smooth and creamy. 2. Let the sauce cool for 30 minutes. (If you have time, put it in the fridge. It will get firm just like fudge!) For the Caramel Topping: 1 cup of light corn syrup 1 1/4 cup brown sugar 1/4 cup Earth Balance 1 cup Silk vanilla coffee creamer 1. In a saucepan, heat the corn syrup, brown sugar, and Earth Balance to a boil over low heat, stirring constantly. Boil for 5 minutes and continue to stir. Combine in creamer, then remove from heat and let cool.

OH GOD YES. Looking at these pictures... makes me feel things. In the part of my brain that I'm pretty sure is usually reserved for hot guys with abs. When I make these, I'll probably end up making some kind of hybrid of the two recipes. Pumpkin Cinnamon Roll Pancakes This is not fair. It is not fair that these pancakes exist, and I'm on a diet. The swirly cinnamon goodness and warm glaze is almost too much to handle. Pixelated Crumb, who brought these beauties into the world, calls them "hands down the most extraordinary pancakes I have ever had." I don't doubt her. Strawberry Lemon Poppyseed Pancakes It's fruit! It's healthy!! Right?? These look like they jumped out of Martha Stewart's kitchen and onto your breakfast table. With homemade strawberry syrup, delicate lemon flavor, and fragrant poppy seeds, you can't go wrong with this beautiful creation by La Creme de la Crumb. Double Chocolate Pancakes If you really, really want dessert for breakfast, then you'd better go with these decadent Double Chocolate pancakes by Bakerella. The cakes, the sauce, even the GARNISH for Pete's sake is chocolate, chocolate, chocolate. YUM. You could also lighten them up by skipping the sauce and garnishing with fresh berries, but where's the fun in that? Lucky Charms Pancakes And now for something completely different. That's right; Lucky Charms pancakes. With marshmallows in the cakes as well as on top! Now THAT'S magically delicious. Perfect for St. Patrick's Day, or just I'm-An-Adult-I-Eat-What-I-Want Day. Get the recipe from Betty Crocker. Apple Pie Pancakes with Vanilla Maple Syrup It wasn't long until somebody brought the apple into this. After bananas, apples and cinnamon might be the next go-to flavor combination for pancakes. You're in luck; these pancakes apparently taste exactly like apple pie. [Week 1] Monday & Friday - Rest Day Recipes (Chocolate Peanut Butter Banana Smoothie)
You've got to love a training plan that starts off with a rest day! Since Tuesday will be my first long distance run, I want to make great post-run meals ahead of time since I'll probably be too tired once I get home. I'll be making a Chocolate Peanut Butter Banana Smoothie since it has complex carbs AND protein. Plus its chocolate peanut butter...hello! Here’s the protein breakdown of my new favorite smoothie: 6 oz greek yogurt → 18 grams 3/4 cup skim milk → 6 grams 1 Tablespoon natural peanut butter → 4 grams The yogurt adds a ton of protein to the shake and should be pretty easy on your stomach, which can be sensitive after a run. Here's the recipe, enjoy! Ingredients: 1 large banana, peeled, sliced, and frozen 3 Tablespoons unsweetened cocoa powder 6 oz Chobani 0% Greek Yogurt (or 2%, flavored or unflavored) 3/4 cup skim milk (or your favorite kind of nondairy or dairy milk) 1 Tablespoon honey, maple syrup, or agave 1 Tablespoon peanut butter (any kind you like) Directions: Put all of the ingredients into the blender, in the order listed, and blend on high until thick and smooth. I would start with only 2 Tablespoons of cocoa powder, blend, and then add 1 more for a stronger chocolate taste. You may need to stop and stir/scrape down the sides of the blender a few times. Drizzle glass with 1 teaspoon of chocolate syrup (optional) and enjoy! If you prefer a less sweet smoothie, you may leave out the honey. Add more peanut butter for a stronger peanut butter taste. Add more milk to make the smoothie thinner, if desired. Add 1 cup of your favorite greens for added nutrition.
