V-Day Vegan Recipe: Blood Orange & Vanilla Waffle 'Doughnuts'
Making doughnuts at home doesn't have to be even half the fuss when you've got a waffle iron! Don't just take my word for it. Try this Valentine's Day waffle 'doughnut' with a guilt-free frosting of vanilla extract and the juice of fresh blood oranges to make a believer out of both you and your lucky brunch date!
The following recipe is a 'veganized' variation of a similar one introduced by Nicole of the Dula Notes cooking blog. I hope this can show skeptics how easy it can be to truly convert any recipe you want into an equally delicious (and heart-healthier) dish!

Vegan Blood Orange and Vanilla Waffle Doughnuts

(Makes approximately 5 waffles)

INGREDIENTS:

To Make Batter:
3 tablespoons of Earth Balance (or another nondairy margarine), melted and cooled


1 cup all-purpose flour
1 teaspoon baking powder
1/4 cup sugar
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
2 tablespoons agave nectar or maple syrup
1/4 of a ripe banana, mashed
1 teaspoon vanilla extract
1/3 cup "Vegan Buttermilk" (Combine equal parts Tofutti Better Than Sour Cream - or another non-dairy sour cream - and water.)
Zest of one blood orange
To Make Blood Orange Glaze:
1 1/2 cup of powdered sugar, sifted
4 tablespoons of blood orange juice

DIRECTIONS:
1) To make the waffles, first preheat waffle iron on high. In a medium bowl, whisk together flour, baking powder, sugar, sea salt and nutmeg.

2) In another medium bowl, whisk the slightly cooled melted Earth Balance, agave nectar, mashed banana, vanilla, 'buttermilk' mixture, and blood orange zest until well combined. Switch to a wooden spoon and add the wet ingredients to the dry ingredients and stir to combine. The batter will be thick.
3) Use a 1/4 measuring cup greased with butter to spoon batter onto the middle of each Belgian waffle square. Cook according to the waffle maker’s directions or until the waffle donuts are golden.
4) Transfer to a cooling rack to cool for a few minutes before glazing.
5) Start making the blood orange glaze by sifting powdered sugar into a medium bowl. Whisk in 4 tablespoons of blood orange juice. You want the glaze to be pretty thick, but you can thin it with additional blood orange juice, if you like.
6) Transfer glaze to a small bowl that can fit the waffle doughnuts for easy dunking. Dip the top of the slightly cooled donuts into the glaze and twist for good coverage. Let cool completely or eat immediately. Enjoy!

Unbelievable! It's too pretty. Can't believe all that pink color comes from blood oranges and no food colorings.
