I love this recipe because it's a much more savory take on what you would normally consider an average fruit salad. Giant chunks of grapefruit and pear are given a savory 'makeover' with the inclusion of flat-leaf parsley, olive oil, and a generous sprinkle of soy blue cheese crumbles. Feel free to make adjustments where you want. (For example, I bet this would taste even better with diced jicama or sliced radish!)
Winter Pear & Grapefruit Salad
(Makes 4 servings)
2 large pears, cored and chopped into about 1/2" cubes
2 medium red grapefruit, peeled, cored and chopped into about 1/2" cubes
2 tablespoons grapefruit juice (Reserve the juice from the chopped grapefruit.)
Extra virgin olive oil, to taste
2 ounces crumbed Soy Bleu cheese alternative (Check your local Whole Foods or natural food store equivalent. The package looks like this.)
Coarse sea salt, to taste
Black pepper, to taste
A small handful of flat-leaf parsley, roughly chopped
1) Prep pears and grapefruit into 1/2" cubes, reserving about 2 tablespoons of grapefruit juice.
2) Gently toss fruit with juice and drizzle generously with olive oil.
3) Scatter with vegan blue cheese and parsley.
4) Season with coarse salt and plenty of freshly cracked pepper to taste. Enjoy!
