Vegan Bloody Mary Mix with a Tomatillo Twist
Tomatoes are red, tomatillos are green. This drink is amazing. Come see what I mean! (Okay, I never said I was a poet, but seriously. Try this vegan tomatillo twist to a standard Bloody Mary, and you may never go back!)

Vegan Tomatillo Bloody Mary Mix

(Makes 12 - 15 cocktail)
INGREDIENTS:
2 1/2 pounds tomatillos, peeled and seeded

2 1/2 garlic cloves, peeled
1 1/2 English cucumbers, peeled and roughly chopped
1 1/2 jalapeños, trimmed and seeded
1 bunch of celery, trimmed and rough chopped
1 bunch of cilantro leaves
1/2 yellow onion, peeled and roughly chopped
1/2 green bell pepper, trimmed, seeded, and roughly chopped
1 cup water
1 cup lime juice
Kosher salt, to taste

DIRECTIONS:
1) Combine the first 9 ingredients in a blender or food processor and blend until smooth.

2) Strain mixture through a metal mesh strainer or cheesecloth to remove pulp and any lingering seeds.
3) Add lime juice and salt to taste. Garnish to your preference. (The example provided uses lemon slices and a rim of Tajín fruit seasoning, but I would also suggest using green olives, celery, cherry tomatoes, or jalapeños.) Serve chilled.

@marshalledgar Tajin is amaaazing. It's chili powder with a little bit of salt and powdered lime. It tastes really good on fruit.

@marshalledgar Ooh that's a good question. I think it would be by the Mexican grocery items. If not, some regular chili powder and lime would do.
