Crème brûlée is by far one of my favorite desserts, but perhaps the most intimidating for me to make. That was, at least, until I discovered how effective broiling can be when you don't have your own food torch. Try this recipe for coconut milk-based vegan crème brûlée to see exactly what I mean. C'est magnifique!
Vegan Coconut Crème Brûlée
(Makes 4 servings)
1/2 cup cornstarch
2 1/2 cups coconut milk
1/2 cup sugar
1 teaspoon vanilla
2 tablespoons coconut flakes
2 tablespoons sugar
1) Preheat oven to broil. Lightly grease four ramekins.
2) In a medium saucepan off the heat, whisk together cornstarch and coconut milk until smooth. Add sugar and turn heat to medium-high; bring to a full boil, stirring constantly. Cook until mixture thickens. Remove from heat. Stir in vanilla and coconut flakes.
3) Fill prepared ramekins and sprinkle sugar on top of each.
4) Place under broiler. Cook until sugar melts and begins to turn a light caramel color. Garnish to taste.
