Ingredients to make 16 gluten free vegan mozzarella sticks:
1 block (200 grams or 7 ounces) of Violife/Viofree mozzarella vegan cheese
250 ml (1 1/4 cup) of almond cream (click here for recipe)
1/2 cup of rice flour
1/2 cup of corn flour (not corn starch!)
1 teaspoon of finely ground sea salt
1 1/2 cup of almond milk
1/2 cup of blanched almonds
1/4 teaspoon of sea salt
2 Tablespoons of agave syrup (do not add any agave syrup if almond milk is already sweetened)
1 teaspoon of xanthan or guar gum (but do not add this until other ingredients are blended smoothly!)
In a very high powered blender add all the ingredients except the xanthan gum. Blend until smooth. Now add the xanthan gum and continue blending until mixture thickens slightly.
This recipe yields 500 ml (2 1/2 cups) of almond cream.
