So I have already done a tutorial on making your very own ranch dressing, but how about caesar? Making a vegan caesar salad dressing is actually quite simple despite the fact the ingredients that make classic caesar dressing (eggs, anchovy, Parmesan) are not even remotely vegan at all. Follow this recipe, and you'll be able to whip up the perfect caesar salad to your next vegan pasta dinner in a flash.
Vegan Caesar Dressing
(Makes 4 servings)
1/3 cup sliced or slivered almonds
1/3 cup hot water
1 to 2 cloves of garlic
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 teaspoon rice vinegar
1 tablespoon capers
1) Place the almonds in a glass of hot water and let them soak for around 15 minutes. Meanwhile, chop up the garlic.
2) When the almonds are soft, throw them in a food processor or blender with the water they soaked in, the garlic, olive oil, lemon juice, mustard, and vinegar. Blend it all up until there are no more large almond pieces, and it begins to look creamy.
3) Add the capers and run the blender again for another 5 seconds to break the capers up.
4) Chill until you are ready to eat.
