Week 9 Meal Plan
Happy Sunday evening. It's the time of the week again to sit down and meal plan. Remember last week I tried @danidee's Vegetable Barley Soup with Golden Beets? It came out delicious! I actually didn't make it vegetarian because my husband wanted some meat that evening, so I added chicken to the recipe. With that said, here is the plan for this week.
Monday
Breakfast: Eggs and side of Okra and Potatoes @danidee
Lunch: Leftover Okra and Potatoes with half chicken sandwich
Dinner: Salmon Salad
Tuesday
Breakfast: Pineapple and banana smoothie
Dinner: Tomato-based spaghetti with eggplants
Wednesday
Breakfast: Granola and blueberry greek yogurt
Lunch: Leftover spaghetti
Thursday
Breakfast: Oatmeal and brown sugar
Lunch: Pesto chicken sandwich
Dinner: Vegetable Beef soup with rice
Friday
Breakfast: Omelette
Lunch: Leftover vegetable beef soup with rice

Friday's meal sounds like a great amount of protein! I am always sluggish at the end of the week so those meals would power me through.
