Granola bars are an absolute life (stomach) saver when you're in a rush, but those little bars can range from $1-2 for one! For students on a budget, this is the best thing you can do for yourself. Eat right without worrying about the price. Don't let the picture fool you, there's NO BAKING involve with this recipe. These super delicious bars are healthy and the best part -- made from the microwave!

What you need:

¼ cup butter, softened
¼ cup honey
¼ cup packed brown sugar
¼ cup peanut butter
2 cups quick cooking oats (not rolled oats!)
1 cup crispy rice cereal
½ teaspoon vanilla
2-3 tablespoons mini chocolate chips
In a pyrex measuring cup stir in butter, honey and brown sugar. Microwave until it starts boiling. Once it boil let it boil for 1 more minute. Remove from microwave and stir in peanut butter and vanilla until smooth.
Pour the mixture over the bowl of dry ingredients (quick cooking oats and crispy rice cereal..etc).
Mix thoroughly and pour it in a lightly greased pan. Let it sit in room temperature for about 2 hours or in the fridge for at 30 minutes. You're done!

Cut it out however you want and store in tupperware or tightly wrapped in plastic wrap.

I know what to do with this recipe....add marshmallows, peanuts and cranberries! I know it's unhealthy but I love chewy granola bars.
I bet these taste better than the boring ones my mom used to buy at the store!
