Vegan Chorizo Lentils and Rice


2 tablespoons olive oil
14 oz package of Tempeh, chopped into cubes
1 white onion, peeled and chopped
3-5 cloves garlic, peeled and minced
¼ cup sun-dried tomatoes, chopped
3 cups vegetable broth
1 cup dried lentils
2 bay leaves
3 tablespoons tomato paste
3 tablespoons tamari (or soy sauce if you're not Gluten-free)
1-2 tablespoons Mrs. Dash Chipotle-flavored seasoning
1 cup cooked brown rice
½ green pepper, roughly chopped
½ red pepper, roughly chopped
1 can stewed tomatoes

This looks like a lentil stew more than a dip but I am all for using tortilla chips as a spoon :)
