Fried plantains are amazing. This is general knowledge to anyone who has ever had them. However, plantain chips are also amazing. And this recipe, which bakes them to a perfect crisp, will give you all of that good flavor without allowing it to stick to your hips. This way you can have your platanos and eat them too!
Baked Spicy Plantain Chips
(Makes about 30 chips)
1 green plantain (Look for them at any market that specializes in Latin American foods.)
1 tablespoon olive or grapeseed oil
2 tablespoons lime juice
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1) Preheat your oven to 400F, and lightly coat a baking sheet with cooking spray.
2) Peel the plantain and cut it crosswise into slices no thicker than 1/8 inch.
3) Grab two bowls and put the oil and lime juice in one. Add the plantain and mix until fully coated. Remove the pieces and put them in the second bowl. Add the spices and salt and mix until all pieces are fully seasoned.
4) Lay them out in a single layer on the baking sheet and bake them for 20 minutes, flipping them halfway. They will be golden and crispy. They are best eaten the day they are made, but can last for an additional day or so.
