If you have extra zucchini (as often happens when they get too big and bloated and taste like blah!) this is a great way to use them up.
You also don't have to use frozen juice concentrate for this recipe, but it will give a much stronger flavor than bottled juice! If you have other concentrate that can be used, though, feel free to use that instead.


_ 1 twelve ounce container frozen juice concentrate (this can be any kind of juice you like! orange juice, pink lemonade, fruit punch, whatever! You'll get different flavors and colors using different kinds), thawed
_ 1 juice can of water
_ 8-12 cups chopped zucchini (see below)
*NOTE: You also need a dehydrator for this recipe. See if a friend has one you can borrow!


1. Wash zucchini, dry off. Trim ends and peel. Cut zucchini in half lengthwise, scoop out seeds with a spoon, discard.
2. Cut zucchini in long strips, then chop across, into ½” cubes. Measure out how much you have.
3. Combine fruit juice concentrate and water in a large non-reactive pot (such as stainless steel or non-stick). Add the zucchini.
4. Bring to a gentle boil, lower heat and simmer for 30 minutes, until cubes are fork tender and translucent.
5. Drain in a colander, spread on mesh lined dehydrator trays.
6. Dry for 8 to 12 hours at 135°, until no longer moist but still flexible (mine did not feel tacky or sticky, yet could be flexed, they took about 12 hours).
7. Let cool on trays for a few hours, then pack up into a mason jar for storage. Freeze them for long term storage, or, eat within a few days!

If you used the pink lemonade wouldn't these be like sour? That'd be pretty good
