'Tis the season to indulge on things that are green. Including this vegan copycat recipe for McDonald's famous St. Patty's seasonal, the Shamrock Shake. Sure, this is vegan, but don't mistake this recipe for being healthy. (Plus, let's be real. Would it be as satisfying if it weren't completely rich?)
Vegan Shamrock Shakes
(Makes 3 servings. Or just 1 serving if you're not going to share.)
1 pint (2 cups) non-dairy vanilla ice cream (I recommend Trader Joe's Soy Creamy brand.)
1 cup non-dairy milk
1/2 teaspoon peppermint extract
1/4 teaspoon green food coloring
A can of Soyatoo! Soy Whip, optional (Find this one at your local Whole Foods.)
Green sprinkles, optional
1) Place ice cream, milk, peppermint extract and green food color in blender; cover.
2) Blend on high speed until smooth.
3) Pour into glasses. Top with whipped cream and sprinkles, if desired. Serve immediately.
