If you're craving for thai food but the closest thai restaurant is an hour away try this ramen hack (when rice noodle is not an option)! It'll take you less than 10 minutes to make yourself a plate of thai fantasy. (Photo credit: Serious Eat)
Cook your noodle as usual until it start to expand. Then add a few peeled shrimp to the pot
a couple minutes before they finish cooking. Pull the pot off the heat and drizzle in a light beaten egg. Drain everything and transfer it to a plate. Finally, add half of the seasoning packet, a few drops of fish sauce, fresh lime and a handful of peanuts.
If you have some more time to spare chop up some scallions and throw in bean sprouts to complete the set.
