Spring Greens: Potato and Pesto Salad

I was always intimidated by making homemade pesto but all you really need is a few ingredients and a blender to take care of all the hard work. It's surprisingly easy to make. If you love hot salad you will love this potato and pesto recipe. You can easily turn this into an entree or side dish for your St. Patrick dinner.

Ingredients:

500g new potatoes
100g green beans
For Pesto Sauce
A handful of basil
Half a cup of freshly grated parmesan
2-3 tablespoons of pine nuts
1 or 2 teaspoons of garlic infused oil
Olive oil (enough to build a thick pouring consistency)

Instructions:

1. Boiled the potatoes in a pot with a few sprinkles of salt.
2. Near the end of the cooking add in the green beans and cook until the beans and potatoes are tender.
3. To make the pesto simply place all the ingredients went into a blender. Do a taste test and add more parmesan if salty enough or garlic infused oil if required. Set it aside when you're satisfied with the flavor.
4. Allow the potatoes and beans to cool slightly. When it's ready, stir through the pesto and serve.
