Guacamole is pretty much epic on its own, but if you want to add a little fruity kick to your standard guac, adding the fruit acidity of pineapple really creates a delicious surprise. And also, like regular guacamole, it's completely easy to make. Try this recipe out the next time you're entertaining guests, and you'll see what I mean!
(Makes about 2 1/2 cups)
2/3 cup chopped pineapple (Fresh is best, but canned will work well too!)
1/2 cup chopped red onion
2 tablespoons chopped cilantro
2 to 3 cloves garlic, minced
Grated zest of 1/2 lime
1 tablespoon lime juice
1/8 teaspoon ground cumin
Pinch of salt
1) Mash up the avocado into nicely sized chunks.
2) Add the rest of the ingredients to the avocado and stir well.
3) Taste and add more salt, garlic, or lime to your preference.
4) Serve at room temperature or chill. Guacamole should be eaten within the day you make it. (But really, why would you wait?!)
