I am not a huge fan of snacking on celery. Put it in a soup, stew, or stir fry and I'm a happy camper, but I find myself buying a huge thing of celery and then throwing half out because I haven't used it. Because of this, I rarely buy celery but then never have any on-hand when I want to make a veggie soup!
I learned this easy trick for freezing celery and just tossing it into whatever you're making and it has saved me some serious time and money!
celery (that's it!)
Thoroughly wash celery and dry. Chop the celery up.
Spoon chopped celery into a clean ice cube tray. Freeze (about 1-2 hours).
Pop the frozen celery cubes out of the tray and place in an airtight container/freezer bag. Label how many celery are within the container (3-4 celery make approx. 6 cubes for me).
Store in the freezer for up to 6 months. Use as usual in soups or stews--just add a little bit of extra cook time!
@nokcha I get the little cubes at Trader Joes :) They have garlic too!
