When I want a side dish that tastes like it took more time, energy, and money than it did I turn to this vegetarian/vegan recipe.
1 bag of red/golden potatoes
1/4 cup of Olive oil
Herb of your choice
Because the actual skin of potatoes holds so many nutrients I opt not to peel it off. I instead cut each potato into sixths before pouring the oil over them. It's easiest to use hands when mixing the oil over all potatoes and then patting them down flat across a baking tray. Set the oven to 435 degrees and bake the potatoes for about 30-40 minutes.
While the potatoes are cooling sprinkle them with either fresh Rosemary or Chives as both flavors work real well here. Enjoy your dish on its own, with eggs, or even with meat if you're into it!
