I just wrote a card about spring veggies you should be eating, and that got me craving asparagus! Here's one of my favorite recipes for this incredible vegetable!
2 mandarin oranges, divided
2 medium lemons, divided
1 tablespoon extra-virgin olive oil
1 teaspoon minced garlic
1 teaspoon dried tarragon or thyme
1 pound asparagus spears, trimmed
kosher salt and freshly ground black pepper
