Healthy Chicken Salad Recipe
This recipe uses a greek yogurt in replacement of mayonnaise. Initially I thought it would be too sour and tarty but it actually taste great! The dried cranberries act as a natural sweetener so it was rather refreshing to eat. It's perfect for weekday lunch box using leftover chicken.
Ingredients:
1 rotisserie chicken, shredded
1 green apple, coarsely chopped
⅓ cup dried cranberries
¼ cup slivered almonds
½ red onion, finely chopped
⅔ cup green grapes, halved
¾ cup greek yogurt
1 Tablespoon lemon juice
salt, pepper and garlic powder, to taste
buns, bread or wrap, for serving
Combine all ingredients. Mix it well and season to taste. Serve as a sandwich or wrap!

I love using yogurt instead of mayo! This sounds like it would have the perfect amount of crunch too :)
