One Pan Balsamic Chicken Veggies

This weekend I have a park day potluck on Saturday, so I'm thinking of bring this dish to the event. Originally, I was thinking of making acai cups but I figure a one-pan dish would be easier to carry to the park. Plus, chicken and veggies are always a hit.

One Pan Balsami Chicken Veggies Recipe

Ingredients:
1/4 cup + 2 Tbsp Italian salad dressing
3 Tbsp balsamic vinegar
1 1/2 Tbsp honey
1/8 tsp crushed red pepper flakes
1 1/4 lbs chicken breast tenderloins
2 Tbsp olive oil
Salt and freshly ground black pepper
1 lb fresh asparagus, trimmed of tough ends, chopped into 2-inch pieces
1 1/2 cups matchstick carrots
1 cup grape tomatoes, halved
Instructions:
Mix salad dressing, balsamic vinegar, honey and red pepper flakes together.
Heat your skillet over medium-high heat. Season chicken with salt and pepper and place the chicken on the skillet. Cook for about 6-7 minutes, rotate it once halfway through cooking. Add half the dressing mixture to skillet and rotate chicken to evenly coat. When chicken is cooked transfer the change to plate.
Add asparagus and carrots to skillet and season salt and pepper to taste. Let it caramelize but make sure the texture is still crisp (this should take 4 minutes). Finally, transfer veggies to chicken plate.
Add remaining dressing mixture to skillet and cook until thickened, about 1 minute. Add tomatoes to chicken and veggies and drizzle dressing mixture in pan over top.

Pikachu Buns
I was in a baking mood and decided to try to make these! They came out good for my first time 😁😁 I'll post my recipes below if you'd like to try and make them. If you'd like the recipe, message me 😘 My bun recipe: -200g milk (Lukewarm) -5g active dry yeast -30g sugar --240g bread flour -60g all purpose flour -30g butter (room temp) -Egg wash Step 1: put lukewarm milk, sugar and yeast in a bowl. Whisk and set aside for 5min Step 2: in a separate bowl, combine bread flour and all purpose flour. Then add milk mixture. Add a pinch of salt and knead dough Step 3: after dough can take ball form, knead in the room temp butter. Knead until butter is fully incorporated. After incorporated, put in a lightly greased bowl cover with plastic wrap and set aside in a warm place for 30-40 min. Step 4: after 30-40 mins, take dough out. It should have doubled in size. Put flour on your finger and poke the middle of the dough. If it first bounce back, declare the air from dough and cut in 8 equal pieces. Form in to balls and set aside on a baking sheet for 10-15 mins. Make sure to cover with a lightly dampened cloth. Step 5: cut two areas on the doughball across from each other in a diagonal direction. Egg was the parts you cut in to. Sprinkle with sugar cover them again with a lightly dampened cloth and let them rest for 30 mins - an hour. They will double in size again Step 6: bake in an oven preheated to 400° for 10-12 mins and you're done! Chocolate pudding filling: -2 egg yolks -2 1/2 tbsp sugar -1 tbsp all purpose flour -1 1/2 tbsp corn starch -1 tbsp coco powder -200ml milk (hot) -2 tbsp butter -30g chocolate. I used four squares of semi sweet chocolate Step 1: whisk egg yolks and sugar together. In separate bowl, combine flour, corn starch and coco powder. Add mixture to yolk mixture and whisk together. Step 2: slowly add hot milk to the chocolate yolk mixture. When fully combined. Put yolk mixture through a strainer into a pot. Out put on burner and set to medium heat. Continuously whisk until mixture thickens to pudding consistency. Step 3: take off heat immediately and add butter and chocolate. Continue mixing until chocolate and butter mix in. Step 4: place plastic wrap directly on pudding and put in fridge to cool. After it cools, mix it again and add to piping bag.
Chicken Alfredo Baked Ziti
Delicious chicken and ziti tossed with a lighter alfredo sauce and baked up to cheesy perfection. INGREDIENTS: CHICKEN BAKED ZITI INGREDIENTS: 12 ounces ziti (or any pasta shape) 2 cups shredded, cooked chicken (about 2 small chicken breasts) 1 batch alfredo sauce (see below) 1 1/2 cups shredded mozzarella cheese (I used 2% low fat) (optional toppings: additional shredded Parmesan cheese, chopped fresh parsley) ALFREDO SAUCE INGREDIENTS: 1 Tbsp. olive oil 4 cloves garlic, minced 3 Tbsp. flour 1 cup chicken broth 1 cup low-fat milk (I used 1%) 3/4 cup freshly-grated Parmesan cheese 1/2 tsp. salt 1/4 tsp. black pepper DIRECTIONS: TO MAKE THE CHICKEN BAKED ZITI: Preheat oven to 375 degrees F.Cook the pasta al dente in a large stockpot of well-salted boiling according to package instructions. Drain. Return pasta to the stockpot and add chicken and alfredo sauce. Gently toss to combine until the pasta is evenly coated. Pour half of the pasta into a greased 11x7-inch or 9x13-inch baking dish. Sprinkle evenly with 1 cup of cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with the remaining 1/2 cup of cheese. Bake for 20-25 minutes until the cheese is melted and just barely starts to turn golden. Remove and serve immediately, sprinkled with additional toppings if desired. TO MAKE THE ALFREDO SAUCE: Heat olive oil in a large saute pan over medium-high heat. Add garlic and saute one minute, stirring occasionally, until fragrant. Sprinkle with flour, and stir to combine. Saute for an additional minute to cook the flour, stirring occasionally. Slowly add chicken broth, whisking to combine until smooth. Whisk in milk, and bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in Parmesan cheese, salt and pepper until the cheese melted. Remove from heat and set aside.
Meatloaf Cupcakes
According to this meatloaf cupcake recipe, cupcakes don't have to be sweet. And I'm totally sold. Plus, everything is much better in miniature form and this includes meatloaf. If I have enough mashed potato leftover I will use this recipe. Makes 12 servings. For the meatloaf: 1 pound ground beef 1 pound ground pork 1 small onion, grated 1 teaspoon garlic powder 1 teaspoon salt 1/2 teaspoon black pepper 1 cup panko crumbs 2-3 splashes Worcestershire sauce 2 tablespoons minced fresh parsley 1/4 cup milk 2 eggs, lightly beaten For the sauce: 1/2 cup chili sauce 1 tablespoon dark brown sugar 1 teaspoon dry mustard For the potato “icing”: 3 cups boiled potatoes, chopped into chunks 1 egg yolk 1/4 cup half and half or heavy cream Pinch of salt 2 tablespoons melted butter Instructions: Preheat your oven to 350 F. Prepare the meatloaf by combining all ingredients together in a large bowl. Mix until incorporated. Don’t over handle the mixture or the meatloaf may be too dense. Chill while you prepare the sauce and potatoes. Make the sauce by whisking the chili sauce, brown sugar and mustard together until smooth. Set aside. While the meat is baking, whip the boiled potatoes together with the egg yolk, half and half or cream and salt until smooth. Stir in the melted butter. Fit a pastry bag with a large star tip and fill with the potato mixture. Set aside, but do not refrigerate. To assemble the cupcakes, lightly spray a cupcake tin with nonstick cooking spray. Fill each indentation with a small handful of the meat mixture, gently pressing it down until it is completely filled. Spread a teaspoon of the sauce around the top of each cupcake, and bake for about 30 minutes, until the meat is cooked through. Remove from the oven and turn on the broiler. Pipe some potato “icing” on top of each cupcake. Put the cupcakes under the broiler for a few minutes until the potatoes are lightly browned, about 2 minutes. Remove from the oven and enjoy.
Perfect Pan-Seared Steak
The basics to any perfect steak dish is a good quality, high-grade cut of beef. Ingredients: 1 bone-in or boneless rib eye steak or sirloin steak at least 1 ½ pounds, cut to at least 1 ½ inches thick Pinch of salt Freshly ground black pepper 2 teaspoons extra-virgin olive oil 3 tablespoons butter 2 peeled garlic cloves, left whole Few sprigs fresh parsley, including stems Optional: Wine and stock (chicken, beef, veal, etc.) and butter for deglazing the pan and making a delicious pan sauce Directions: 1. Salt and pepper one side of the steak. 2. Heat your seasoned cast iron skillet to smoking hot. Add oil and swirl around to coat. Add steak seasoned-side down (place it in pan away from you so you don’t get splattered), and then salt and pepper the other side of the steak. At this point do not touch it for two minutes. Using tongs (never pierce the meat with a fork), flip the steak and add butter, garlic and parsley to the pan next to the steak. Allow the steak to cook for 2 more minutes. 3. Right after you flip the steak for the first time, with a spoon or small ladle, keep basting the melted butter over the steak. Baste continually for the full two minutes (tilt pan a little if you have to, to get the butter onto the spoon). 4. After two minutes on each side, keep flipping and basting the steak each time leaving the steak for 30 seconds before turning. Test the steak with the poke test (see note below) and remove at medium rare at about the five to six minute mark of total cooking time. Cook a minute or two longer for medium to well. A thicker steak (such as a sirloin) may take longer. 5. Turn off the heat and baste one more time. Leave the steak in the pan loosely covered with foil for 10 minutes and allow to rest before cutting. Baste one more time, and remove to a cutting board. Either cut the steak in half for each serving or for a nicer presentation, slice on the bias and serve slices. 6. Discard the pan drippings or if desired, deglaze the pan with a little wine, then and stock and simmer for a few minutes to reduce the drippings. Add a tablespoon or two of butter to thicken for a nice pan sauce .
