Sweet Potato Salad with Avocado Aioli

Ingredients

2 large sweet potatoes, peeled and cut into 1-inch cubes (about 4½ cups)
⅔ cup finely-diced red onion (about ½ a small onion)
½ cup finely-diced celery (about two stalks)
¼ cup raw pepitas
2 tablespoons finely-chopped fresh dill
¼ cup dried currants, optional
2 small avocados, pitted and peeled
1 tablespoon fresh lime juice
1 to 2 garlic cloves
¼ teaspoon sea salt or to taste
black pepper, to taste

I was really surprised to see that avocado aioli doesn't even use mayo. It seems like it's creamy enough to hold up on its own!
