Happy Wednesday! To celebrate Earthy Day, we're going green with our waffle recipe this week. Let me introduce you the match green tea waffles. These are gluten and diary-free. As soon as you take a bite into the crispy waffle you can taste the matcha flavor. It's the most healthy waffle recipe out there (no butter and no sugar).

Matcha Green Tea Waffle Recipe

Ingredients:
Dry
2 cups gluten-free flour blend (I used Trader Joe's brand)
2 teaspoons baking powder
1/2 teaspoons baking soda
1.5 teaspoons matcha powder
Wet
2 large eggs
1/4 cup raw honey
1 teaspoon vanilla extract
2 tablespoons coconut oil, partially melted
1 cup almond milk, unsweetened
Instructions:
1. First, preheat your waffle maker to low/medium.
2. Then, whisk two large eggs in a large bowl. Add in the rest of the wet ingredients (minus the coconut oil, we will add this last!) and mix. Slowly add in dry ingredients and mix to combine. Finally add in coconut oil and mix until smooth.
3. Using a 1/2 cup measuring cup, scoop batter onto waffle maker. Let cook for about 2-2.5 minutes. Repeat.
4. Top with coconut whipped cream, honey, and a few dairy-free chocolate chips!

The first time I saw a green tea waffle was at a really cute Asian cafe (in Seoul). The serve it with frozen yogurt on top. I couldn't get my mind off it and I've been looking for a similar waffle at my local cafe but none of them have this item! I'm so glad you posted this!
Add a few chocolate chips in there too!
I don't even need any topppings, this looks yummy enough to munch on all by itself!
