Grilled Lemon Garlic Zucchini
This recipe was easily veganized from the original Damn Delicious recipe.

1/4 cup Earth Balance, melted 3 cloves garlic, minced
1 teaspoon Italian seasoning
Juice of 1 lemon
Kosher salt and freshly ground black pepper, to taste
2 medium zucchini
2 tablespoons chopped fresh parsley leaves

I substitute coconut oil for the Earth Balance. Wonderful!

@KrisGreene Really? What else do you use coconut oil for in cooking? I have a jar of it I bought a while back, but haven't really put to good use.

Anywhere you use oil or butter, you can sub coconut oil.
