By now you should know my love for avocado is never ending. Which is why I try to incorporate it to any main dish, side dish and appetizer when I have an avocado sitting around in my kitchen. As for dessert, I love using it avocado for smoothie and popsicles. It's low in sugar, creamy and refreshing.
1 ½ Cups basic simple syrup
¾ Cup Coconut Milk
20 fresh tarragon leaves
Add the tarragon leaves to a cocktail mixer then add 1 tablespoon of simple syrup and set it aside.
Puree the avocados with two lime juiced.
Mix the pureed avocado, the 3/4 cup coconut milk and the 1 1/2 cups of tarragon-infused simple syrup to a large measuring cup. You should have nearly 3 cups of liquid.
Divide it in a popsicle mold and freeze them!
