By now you should know my love for avocado is never ending. Which is why I try to incorporate it to any main dish, side dish and appetizer when I have an avocado sitting around in my kitchen. As for dessert, I love using it avocado for smoothie and popsicles. It's low in sugar, creamy and refreshing.
Ingredients:
2 Avocados
2 Limes
1 ½ Cups basic simple syrup
¾ Cup Coconut Milk
20 fresh tarragon leaves
Add the tarragon leaves to a cocktail mixer then add 1 tablespoon of simple syrup and set it aside.
Puree the avocados with two lime juiced.
Mix the pureed avocado, the 3/4 cup coconut milk and the 1 1/2 cups of tarragon-infused simple syrup to a large measuring cup. You should have nearly 3 cups of liquid.
Divide it in a popsicle mold and freeze them!

Whoa! I've never had frozen avocado before. Sounds like it would be totally creamy but I'm not sure about the taste haha
All I'm seeing is frozen guacamole but I'm not complaining ;)
