If you ever thought tacos can’t be vegan or healthy -- you’re so wrong. Authentic tacos are actually pretty healthy. Just like with a lot of foods, tacos are versatile, and you can add, or leave out whatever your vegan heart desires. And fine, tacos are usually cooked with meats, but today we’ll leave that out. In the mean time, we can bring on the beans, squeezed lime, and just bite into a fresh veggie galore.
I am a fan of easy no-boundaries recipes, so let’s talk about guacamole tacos and make a mess in the kitchen.
What You’ll Need:
Soft corn tortillas
Pico de gallo
How To Make It:
Warm the tortilla in an oven - microwave just isn’t the same. However, if you’re lazy like I am, 30 seconds in the microwave will suffice.
To warm the tortillas in the oven, set the oven to 350 degrees. Allow the oven to pre-heat. Wrap your tortillas in aluminum foil and let them sit in the oven for about 15 minutes.
For your sauteed onions, add a small amount of butter or oil to a pan, and sauté onions until they are browned.
That was that hardest part.
Now, you’ll want to take your guacamole, pico de gallo, corn, black beans, and onions, and place them in the middle of the taco. Squeeze a generous amount of lime on top.
Put as much or as little of everything listed. If you want, throw in other ingredients in. Cooking has no boundaries!
