How on earth is this even vegetarian?! Fried eggplant is one of my favorite foods. And with chipotle sauce? Even better. I'd say that eggplant fries are so much better than your regular, boring potato fries. And, these fries are actually HEALTHY. Thank you food lords. Thank you.
What You'll Need:
1 medium 1 eggplant, cut into ½ inch strips ½ cup bread crumbs (I used panko) ½ cup Parmesan cheese, grated 1 teaspoon Italian seasoning ¾ teaspoon garlic salt 2 eggs
How To Make It:
Pre-heat oven to highest temperature. Lightly coat a baking sheet with oil. Mix cheese, bread crumbs, Italian seasoning and garlic salt in a medium sized bowl. In another small bowl, beat the two eggs Generously dip eggplant strips first in the egg then in the breadcrumb mixture. Place eggplants on oiled baking sheet. Spray the tops lightly with oil Place tray on the top level in the oven and broil for 3 minutes. Turn eggplant fries and broil for another 2 minutes.
For The Sauce:
Mix ketchup, marinara, and chipotle aioli -- or use whatever dip you want!
I am so done with potato fries -- they just cannot compete with this!
