It's not exactly hot cocoa season, but this recipe is worth saving for the colder months. The texture is just so perfectly creamy and rich, more like pure melted chocolate than that icky powder-and-water Swiss Miss. One thing you should always, always make from scratch is hot chocolate, because 1) it's easy and 2) the difference in quality and taste is astronomical! This Italian Hot Chocolate is the perfect adult hot cocoa with a twist. Dark chocolate will satisfy your cocoa fix, while cinnamon and sea salt add a few complex background notes. Yum!
Italian Hot Chocolate
4 oz. dark chocolate, shaved
1 1/2 cups milk
1 tbsp. sugar
3/4 tbsp. cornstarch
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/8 tsp. sea salt
whipped cream, optional
1.) Place shaved chocolate in a small saucepan over low heat and add 2 tablespoons milk and vanilla extract.
2.) Use a wooden spoon to stir chocolate as it begins to melt. Slowly add remaining milk and continuing stirring until completely smooth.
3.) Add in sugar, cornstarch, cinnamon, and sea salt, and stir until everything is dissolved and combined. Once mixture boils, let it cook for another 1-2 minutes, or until thickened enough that it coats the back of your spoon.
4.) Pour into 2 mugs and top with whipped cream if desired. Serve immediately.
