I love portable, healthy meals, and these 'fruit boats' are a perfect example of a complete vegan meal for the person 'on the go'! You can enjoy these at home for breakfast or a snack, or you can pack the fruit, yogurt, nuts, seeds, and granola ahead of time as a simple and delicious meal prep for your work or school lunch. To assemble these papaya or cantaloupe boats, simply fill the hollow centers with a cup of any plain or flavored dairy-free yogurt, the cherries, kiwi, and blueberries, slivered almonds, hemp and chia seeds, and granola! Enjoy immediately - best when fresh!
