Attention, campers! Say hello to summer with these camp-inspired cookies. With cacao nib 'rocks', pretzel 'logs', and a red candy 'fire', you'll find yourself feeling the nostalgia of summer camp - grizzly bears and that babely camp counselor not included.
The best part is that this recipe is 100% gluten- and dairy-free, making it a suitable summer snack for kids (and adults!) of all different food allergies and diet restrictions. (Although, let's be real - these ice cream cone campfires might be a little too cute to eat!)

MAKES 6 COOKIES
With a pair of kitchen scissors, carefully cut out an opening in your gluten-free ice cream cone as well as the top (make sure the opening on the top is wide enough to fit a pretzel piece). Dip the bottom and top into the melted chocolate, and set down on a cookie of choice.
Place a half piece of a gluten-free pretzel stick into the top opening. With a toothpick, dab the melted chocolate around the sides of the tent and add the cacao nibs (which look so similar to rocks). Snap two gluten-free pretzel sticks in half, and use the melted chocolate as 'glue' to hold down. Place in the opening of the tent to portray fire logs.
Take two red hard candies, and place on a parchment paper-lined plate, and microwave for 20 seconds or until just melted. Allow to set fully, and then break up. Glue into the pretzels logs as fire. Take a piece of broken up ice cream cone and glue it onto the top of the tent to look like a flag. Allow to fully set.
