Cupcake Cake Pops
These adorable treats nearly got me up out of my chair in excitement when I found them!! How cute!!! They're like mini-cupcakes on a stick. It's hard to imagine an event where these would not be perfect – birthday parties, kids events, weddings, baby showers, holidays... all you'd have to do is adjust the color scheme according to your needs, and voilà! A perfectly portioned dessert that keeps your hands clean and your mouth smiling.

(Bakerella swears by the red velvet and cream cheese frosting texture, but in theory, you could use any kind of cake mix you want! There are also some really intriguing no-bake recipes I hope to experiment with soon...)
What You'll Need 1 box red velvet cake mix (baked according to box directions) 1 16 oz. can cream cheese frosting Lollipop sticks Chocolate bark / Colorful candy melts Sprinkles / candy to decorate
(Lollipop sticks and candy melts should be available at your nearest craft store in the candy making aisle!)
Step One. Crumble your already-baked red velvet cake into a large mixing bowl. Add cream cheese frosting and mix thoroughly (using your hands might be the best option!)
Step Two. Roll mixture into balls measuring 1.25 – 1.5 inches. Chill for several hours in the fridge, or about 15 minutes in the freezer.
Step Three. Shape your pops (see more detailed instructions on this below!)
Step Four. Dip your pops in chocolate or candy melts, add sprinkles, and enjoy! (Again, more details below!)

How to Shape Your Pops To shape the cake balls into a cupcake shape, you can choose between two methods.
First, Bakerella's suggested cookie cutter method (this is the cheaper option.) Check out the photo below to see which cookie cutters she recommends. Scroll to see how to make the cupcake shape – you use the cookie cutter on the bottom half, but leave the top of the ball rounded (photo by blogger ComeOnIlene). Another method to make the cupcake shape is to use a store-bought cake pop shaper like this one (see image 3 above) from My Little Cupcake. They offer a set of 5 different shapers for $14.95, including the cupcake and an adorable heart (Valentine's Day cake pops, anyone?) How To Dip Your Pops First, melt the chocolate in the microwave in 20 second intervals, stirring in between to make sure it doesn't burn. Using your fingers to carefully hold each mini cupcake, dip the bottom in melted chocolate (this creates the "wrapper" part of the cupcake). Place gently, upside down, on wax paper so the chocolate can cool. Stick the lollipop sticks in (only about 1/2 or 3/4 of the way through the pop) before the chocolate hardens.
Once you've done all the pops, you can start dipping the tops! Melt candy melts or white chocolate in a similar fashion, and dip the tops to create the "frosting" part of the cupcake. Add a few sprinkles and/or candy decorations before candy shell hardens. Allow to cool and harden in an upright position; you can create a quick and easy stand by just poking the sticks into a piece of styrofoam. Aaaand ta-da! You're all done!
If you're handing these out as favors, make sure to package them up in little baggies, and tie closed with a pretty little ribbon. This is one of those recipes that will DEFINITELY make you some new friends. ;)
