This week for Tuesday lunch we made Tofu Chicken taco with whatever we have available. Originally, we wanted to make our own corn tortillas but the nearby markets did not carry them. We ended up purchasing store bought tortillas. However, we did try to make the tortillas more flavorful by heating them with butter and garlic cloves.
Also, sorry for the photo quality, I forgot my camera at home today and have to document everything with the iPhone. Hence, the collage.
The chicken breast was marinated in cilantro mango juice for one hour before grilling. This made the texture a little more brown and crispy.
The tofu was chopped into cubes, coated with flour and 1 teaspoon sesame oil before grilling on the pan. After removing it from the pan, we added 2 teaspoons of soy sauce and 1 teaspoon of brown sugar.
The rest is super easy.
