4 Quick and Healthy Desserts for the 4th!
It's not all apple pie and ice cream sundaes on the Fourth! Pile up on the red-white-and-blue fruit and whip up these mini desserts that are quick, easy, and best of all good for you!

Just beware of the whoopie pies...You'll want to eat about 7!

4th of July Brownie Bites

The original recipe calls for store-bought brownie bites, so here is a recipe for some classic home-made bites your can use instead! Ingredients 6 tablespoons (3/4 stick) unsalted butter, cut into pieces, plus more for the pans
1/2 cup all-purpose flour, spooned and leveled
2 tablespoons unsweetened cocoa powder
1/4 teaspoon kosher salt
4 ounces semisweet chocolate, coarsely chopped
1 cup granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
Directions Heat oven to 350° F. Generously butter 2 12-cup mini muffin pans. In a medium bowl, whisk together the flour, cocoa, and salt; set aside.In a medium saucepan, melt the butter and chocolate over low heat. Remove the pan from heat and mix in the sugar and vanilla.
Add the eggs and mix until combined. Stir in the flour mixture until just combined (do not overmix).
Spoon the batter into the muffin cups, filling them no more than two-thirds full. Bake until a toothpick inserted in the center of a brownie comes out clean, 20 to 25 minutes.
Set the pans on wire racks to cool for 10 minutes, then transfer the brownies to the racks and let cool completely.







Star-Spangled Lemon Whoopie Pies

For the Lemon Cakes:
½ cup whole wheat flour
½ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
¼ cup canola oil
⅔ cup granulated white sugar
1 egg
½ cup plain low-fat Greek yogurt
1 teaspoon vanilla extract
1 lemon, zested
3 ounces fresh strawberries, diced
3 ounces fresh blueberries
¼ cup confectioners' sugar

4th of July Fresh Berry Trifles

Ingredients One 12-ounce lemon pound cake (homemade or store bought)
4 ounces cream cheese, softened
3 tablespoons granulated white sugar
1 cup heavy whipping cream
1 1/2 cups blueberries
1 1/2 cups finely diced strawberries
10 8-ounce plastic (see-thru) cups

Omg, forget the whoopie pies - I would eat trifle after trifle. I'm obsessed with them. Although, I would say I'm really surprised just how healthy these ingredients lists are. I wasn't expecting those whoopie pies to be made with Greek yogurt!
