Eat to the Season: Blackberry Lemon Layer Cake
Why should you eat seasonally? Other than the fact that the foods taste a thousand times better when they're in their prime, you're probably supporting local farmers and sustainable farming practices, and its just downright good for your body!

Here's an GORGEOUS blackberry lemon layer cake that will taste exactly like summer should.


serves 6 // makes 1 8-inch layer cake

Ingredients:
Cake -
2 cups cake flour
3/4 tsp baking soda
1/4 tsp salt
1/2 c whole milk
2 1/2 tsp fresh lemon juice 1 c granulated sugar
2 large eggs
Frosting -
1/2 cup whipping cream
4 tbsp sugar 1/2 tsp vanilla
1 cup blackberries (chopped in food processor)
1 – 3 cups of additional blackberries and zest from 1 lemon for decoration

The contrast between the berries and the lemon zest garnish is so pretty. And in my case, it TOTALLY covers up a less-than-wonderful icing job lol.
