Creamy Avocado Fig Smoothie Bowl
1" piece fresh ginger, peeled
1 teaspoon vanilla
1 cup coconut milk or almond milk
2 tablespoons dark chocolate
1/2 teaspoon coconut oil
Toppings: fresh figs, sliced almonds, cacao nibs, hemp seeds
Pit and scoop out avocado flesh. Place that and peeled banana, broken into chunks, in the blender. Add ginger, vanilla, and your chosen liquid (almond milk is great for the added protein). Blend until smooth. Pour into a bowl and top with slices of fig, cacao nibs, hemp seeds, and sliced almonds.
