Yes you did read that title correctly. Buffalo Chickpea Dip. Wow, its like vegetarians can totally enjoy the deliciousness of chicken wing dip without the chicken!
And it is even easier to make then the regular chicken dip (and a bit healthier too!)
So heres how you make it!
Buffalo Chickpea Dip
1 One can of chickpeas
1/4 cup of cream cheese (to make it lighter use the 1/3 less fat cream cheese)
1/4 cup Hot Sauce, I use Franks
1/4 cup Ranch or Blue Cheese Dressing
1/4 cup cheddar cheese for the top
Set your oven to 350 degrees.
Mash the chickpeas, some chunks and whole chick peas are more than welcome.
Then combine the mashed chickpeas, hot sauce, and dressing in a large bowl.
Mix them well! You want everything to become a giant pinkish pile of goodness.
Spray the baking dish!
Spread the dip evenly in the baking dish and add the cheddar cheese on top!
Bake for about 20 minutes and serve!
Bask in the glory of making everyones new favorite dip.
**TIP: What I love the most about this dip is the measurements don't need to be followed that closely! I always add way more cheese (because duh cheese is amazing), and extra hot sauce to make it extra spicy.
So for all you die hard Chicken Wing Dip fans I did a little experiment. For my office pot luck I made both the chick pea and the chicken wing dip, since some of my coworkers are vegetarian. The only thing different about them was one had meat the other did not.
So I tried them both.
And they were both amazing! I actually could not tell the difference between the dips! The chunky chick peas gave the perfect texture and soaked up the flavors really well!
So if you are vegetarian or just trying to eat a little healthier, but still can't kick the chicken wing dip habit, you need to try this dip! It is everything you dream about and more.
P.S. My coworkers were scraping the bowl by the end of the day! Definitely a success.
