Acai berries are the latest clean eating craze, straight from Brazil's Amazon rainforest. Brazilians call acai "the beauty berry," and that's no coincidence: it's packed with antioxidants, amino acids, and essential fatty acids, which give you major health benefits. Look for higher energy levels, faster metabolism, a bolstered immune system, and (best of all, for you beauty mavens out there!) better hair and skin.

Acai Berry Smoothie Bowl
Prep Time: 10 min. Difficulty: Easy
Recipe adapted from Nutrition Stripped
All you need is a blender!
1 packet of frozen organic acai berry pulp (such as Sambazon Pure Unsweetened Acai Pulp)
2 heaping handfuls of organic spinach
1 frozen banana
½ cup coconut milk, unsweetened
2 tablespoons of chia seeds (soaked for at least 20 minutes in some of the coconut milk)
dash of cinnamon
ice as needed to thicken
Suggested toppings: bee pollen, dried goji berries, sliced peaches, unsweetened dried coconut flakes, raw cocoa powder, granola or muesli, and banana chips.
Simply place all ingredients into your Vitamix or high speed blender and blend until thick and creamy. The texture should be very thick; if too thick, then add more almond or coconut milk. If you stick a spoon into the mixture, it should be thick enough to stay on the spoon. If not, add ice or more frozen bananas. Sprinkle on the suggested toppings, or the toppings of your choice! You can use fresh fruit, raw nuts and seeds, avocado, dark chocolate chips, cacao nibs, etc. Serve immediately and enjoy :)
Note: You can substitute the frozen acai pulp with one tablespoon of acai powder plus a cup of frozen berries.
