Can't decide between sweet and heat? Choose both! Jalapeño simple syrup and tequila stoke the fire, while ripe peaches add a perfect summer sweetness. Fresh lime juice keeps things jazzy. I envision this frozen blended cocktail being the hit of the cookout!
Peach Jalapeño Margarita
Prep Time: 10 min. Makes 2 cocktails. Difficulty: Easy
Recipe adapted from Dessert for Two
For the jalapeño simple syrup:
½ cup sugar
½ cup water
½ of a fresh jalapeño
For the margaritas:
2 ripe peaches, pitted and diced
2 tablespoons fresh lime juice
¼ cup jalapeño simple syrup
1-2 shots of silver tequila
extra lime juice for the rim of the glass
salt or sugar for the rim of the glass
1. Make the jalapeño simple syrup: Combine sugar, water, and jalapeño in a small saucepan and bring to a simmer. Use a wooden spoon to crush the jalapeño against the side of the pan to extract its flavor. Once the sugar is dissolved, remove from heat and let cool. Store in the fridge until ready to use.
2. Make the margaritas: Place diced peaches, lime juice, 1/4 cup of the simple syrup, and 1 or 2 shots of tequila into blender. Blend until smooth. Add a handful of ice cubes, and blend until thick and slushy. Wet the rim of the glass and dip in salt or sugar; serve margarita immediately, garnished with a wedge of lime.
– Use the extra simple syrup to spice up homemade lemonade!
– You could also use frozen peaches (whether you freeze your diced peaches or just buy the fruit pre-frozen) and skip the ice.
