Summer means all things pasta salad, which is probably why it is my favorite time of year. Pasta salad is the best part of BBQ's and there are so many out there that you might go a whole summer without repeating once!
So recently I had another potluck with my job (we rock), and since 4th of July is right around the corner I wanted to wow my coworkers with a very different type of pasta salad. So ditch the mayo, peppers and elbow pasta, because were about to make a Caprese Pasta Salad!
This salad is super simple! I was able to make it in about 30 minutes and that includes the time it took to cook the pasta!
- 1 lb of pasta (shells worked fine for me!)
- 1pint of 1 pint Grape Tomatoes, quartered
- 1 container Fresh Mozzarella Pearls {or 1 ball fresh mozzarella, cubed small}
- 1 cup Fresh Basil, sliced into ribbons
- Kosher Salt and Black Pepper
- 2 Cloves of Fresh Garlic
- 1/3 cup Balsamic Vinegar
- 3 tablespoons Olive Oil
- Cook the entire box of pasta, drain it and set it aside to cool. I put mine in the fridge for 10 minutes.
- Mince or press the cloves of garlic. Add 1/3 cup of Balsamic Vinegar and stir. As you are stirring, slowly add the oil. Keep stirring so that the dressing doesn't have a chance to separate!
- Take the pasta out and add the quartered tomatoes, sliced mozzarella balls and basil. Mix well so that everything is spread throughout!
- Add the Balsamic and stir until each noodle is coated.
- Top with salt and pepper to taste
- Keep refrigerated until served
This pasta salad was super easy (and cheap) to make and the result was delicious! It turned out to be very light and fresh, a perfect compliment to BBQ-ed chicken or burgers.
My co-workers finish the whole salad and raved about it!
My only tip would be to get extra mozzarella cheese because while I was preping the salad I ate about a third of those cute little balls of fresh mozz! And I do not regret it at all!

Hahahah the cheese note is the best part of this. I seriously end up eating half the cheese whenever I make something too. ESPECIALLY if it's fresh mozzarella. The fact you were able to get through the entire recipe with some of those left is truly inspirational to me.
