Mexican Food Sans Margaritas
I live on California time, which basically means, it's always summertime here. And we all know that summertime means damn good Mexican food. (I eat a lot of it!) And though I love a good margarita with or without Mexican food, there is an entire world of spirits that marry well with this cuisine.
Even if all you're doing is pool-siding it with Janet Evanovitch novels and bottomless chips and salsa, check out the fresh Cilantro Cooler!


1/2 cup chopped cucumber
5 cilantro leaves, plus 1 flowering cilantro sprig for garnish
2 ounces vodka
3/4 ounce fresh lime juice
3/4 ounce Simple Syrup
1 ounce chilled club soda

Shake it up

Muddle the cucumber and cilantro leaves.
Add ice and then vodka, lime juice and Simple Syrup, shaking well.
Double strain into an ice-filled collins glass.
Stir in the club soda and garnish.
